Whip up these quick and delicious corn dog muffins for a fun twist on a classic fair treat.
Ingredients:
  • 2 (8.5 ounce) packages cornbread mix
  • 2 tablespoons brown sugar
  • 2 eggs
  • 1.5 cups milk
  • 1 cup grated Cheddar cheese
  • 9 hot dogs, cut in half
Instructions:
  • Preheat the oven to 400°F (200°C) and lightly grease muffin tins.
  • Combine cornbread mix and brown sugar in a large bowl. In a separate small bowl, whisk together eggs and milk until smooth. Gently fold eggs and cheese into the cornbread mixture until just combined. Fill muffin tins 2/3 full with the batter and place half a hot dog into each tin.
  • Bake until beautifully golden, 14-18 minutes in the preheated oven.
