Corn Dog Casserole

Savory hot dog, celery, green onion, cornbread batter, and melted Cheddar cheese casserole - a delicious taste of the fair!
Ingredients:
  • 2 cups thinly sliced celery
  • 1.5 cups sliced green onions
  • 2 tablespoons butter
  • 1.5 pounds hot dogs (beef and pork frankfurters)
  • 2 eggs
  • 1.5 cups milk
  • 2 teaspoons ground sage
  • 0.25 teaspoon ground black pepper
  • 2 (8.5 ounce) packages dry corn bread mix
  • 2 cups shredded Cheddar cheese, divided
Instructions:
  • Saute celery and green onions in butter in a medium skillet for 5 minutes until fragrant and tender. Transfer the aromatic mixture to a large bowl and set aside.
  • Cut hot dogs lengthwise into quarters and then into thirds. Saute in the skillet until lightly browned, about 5 minutes. Add the hot dogs to the celery and onion mixture, combine everything well, and reserve 1 cup of the mixture for later use.
  • Preheat your oven to a toasty 400 degrees F (200 degrees C).
  • Mix eggs, milk, sage, and pepper in a large bowl. Stir in most of the hot dog mixture, reserving 1 cup. Add cornbread mix and 1 1/2 cups shredded cheese. Spread mixture into a 3-quart baking dish. Top with reserved hot dog mixture and remaining cheese. Bake.
  • Place in a preheated oven and bake until beautifully golden brown, uncovered, for about 30 minutes.
