Kid-friendly golden fritters with creamy capsicum dip.
Ingredients:
  • 150g (1 cup) self-raising flour
  • 400g can creamed corn
  • 125ml (1/2 cup) milk
  • 2 eggs, lightly whisked
  • Ground white pepper
  • 80ml (1/3 cup) olive oil
  • 125g bought roasted capsicum dip
Instructions:
  • In a large bowl, gently combine the sifted flour with corn, milk, and egg until just mixed. Season with a touch of salt and white pepper.
  • Heat oil in a large non-stick frying pan over medium heat. Drop 4 tablespoons of corn mixture into the pan, flatten slightly, and cook for 1-2 minutes on each side until golden and cooked through. Transfer to a plate lined with paper towel. Repeat with the remaining batter in 4 more batches, reheating the pan as needed.
  • Arrange the delicious fritters on a serving platter. Put the capsicum dip into a sealable bag and snip off one corner. Use the bag to pipe adorable smiley faces on the fritters.
