Elevate corn fritters with creamy avocado topping.
Ingredients:
  • 1 avocado, halved, stone removed, peeled
  • 37.60 gm extra-light sour cream (Pauls brand)
  • 1 small red chilli, halved lengthways, deseeded
  • Pinch of salt
  • 1 x 420g can corn kernels, rinsed, drained
  • 2 eggs, lightly whisked
  • 40.00 ml chopped fresh coriander
  • 40.00 ml plain flour
  • 36.80 gm vegetable oil
Instructions:
  • Combine avocado, sour cream, and chili in a food processor. Blend until smooth. Taste, and add salt to season.
  • Combine the corn, egg, coriander, and flour in a medium bowl, then whisk until fully mixed. Heat the oil in a large non-stick frying pan over medium-high heat. Spoon 1 tablespoon of the batter into the pan, spacing them about 2cm apart. Cook each side for 2 minutes until golden and cooked through. Transfer to a plate and cover with foil to keep warm. Repeat the process with the remaining batter to make 4 more fritters.
  • Top fritters with creamy avocado sauce.
