Corn Tomato Salsa

Corn salsa: perfect for chips or chicken.
Ingredients:
  • 1/2 teaspoon grated lime peel
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon salt
  • 1 can (7 oz) whole kernel sweet corn, drained
  • 2 medium plum (Roma) tomatoes, chopped
  • 4 medium green onions, chopped (1/4 cup)
  • 1 to 2 jalapeño chiles, seeded, chopped
  • 2 tablespoons chopped fresh cilantro
Instructions:
  • In a medium bowl, whisk together lime peel, lime juice, and salt until well combined. Add the remaining ingredients and mix well. Serve immediately or refrigerate until ready to serve.
