Freezer-friendly crispy corn fritters for tasty snacks or party appetizers.
Ingredients:
  • 150.00 gm self-raising flour
  • 2 eggs
  • 420g can corn kernels, drained, rinsed
  • 6.00 green onions, thinly sliced
  • 1 small red chilli, deseeded, finely chopped
  • 75.90 gm rice bran oil
  • 3 tomatoes, deseeded, finely diced
  • 42.00 gm lime juice
  • 82.50 ml fresh coriander leaves
Instructions:
  • In a bowl, combine flour with salt and pepper. Create a well in the center and add eggs along with 1/4 cup cold water. Whisk until smooth, then gently fold in corn, onions, and chili.
  • In a large non-stick frying pan over medium heat, heat half of the oil. Cook 6 fritters using 1 heaped tablespoon of batter for each for 2 to 3 minutes per side until golden and cooked through. Transfer to a plate lined with paper towel. Repeat with the remaining oil and batter. Let them cool.
  • Create a flavorful tomato salsa by mixing together fresh tomatoes, onions, zesty lime juice, and fragrant coriander in a bowl. Enhance the taste with a pinch of salt and pepper. Enjoy the salsa with crispy fritters.
