Enhance corn fritters with zesty chilli dressing for a flavorful kick.
Ingredients:
  • 4 corn cobs, husks removed
  • 1 garlic clove, crushed
  • 2 eggs
  • 40g plain flour
  • Salt & freshly ground pepper
  • 80ml vegetable oil
  • 80g pkt baby rocket
  • 1 small fresh red chilli, deseeded, finely chopped
  • 1 tsp grated fresh ginger
  • 125ml lime juice
  • 40.00 ml sesame oil
Instructions:
  • Cut corn kernels off the cobs with a sharp knife. Put kernels in a food processor and pulse lightly until just crushed, being careful not to over process.
  • Combine the mixture in a bowl with garlic, eggs, and flour. Mix thoroughly and season with salt and pepper.
  • Heat oil in a frying pan over medium heat. Cook corn mixture by the spoonful until golden and cooked through, about 1-2 minutes per side. Transfer fritters to a paper towel-lined plate. Repeat with the rest of the corn mixture.
  • Prepare the zesty chilli dressing by combining red chilli, ginger, lime juice, and sesame oil in a bowl. Whisk until well blended and season with salt to taste.
  • Arrange the rocket on serving plates and place the corn fritters on top. Finish by drizzling with the chili dressing and serve promptly.
