Summer barbecue essential: Spicy corn, a flavorful vegetarian side dish.
Ingredients:
  • 2.50 gm ground cumin
  • 1 tsp ground coriander
  • 2.50 gm ground paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 4 corn cobs
  • 42.00 gm lemon juice
  • 100g fetta, crumbled
Instructions:
  • In a large bowl, mix together the cumin, coriander, paprika, onion powder, garlic powder, and oregano. Season with salt and pepper. Add the oil and stir until a thick paste forms.
  • Preheat a barbecue grill or chargrill to medium-high heat. Fold back corn husks, tie with kitchen string, and remove the silk. Rub spice mixture over kernels, saving any extra. Wrap husks in foil and grill, turning occasionally, for 10 minutes until tender and charred.
  • Unwrap the corn and remove the kitchen string. Transfer the corn to a beautiful serving platter. Drizzle with fresh lemon juice and sprinkle with the reserved spice mixture. Finish by adding crumbled feta cheese for a delicious finishing touch.
