Elevate your cornbread stuffing with flavorful Mexican chorizo for a delicious twist that can stand on its own as a main course.
Ingredients:
  • 1 pound fresh Mexican chorizo
  • 1 tablespoon salted butter
  • 1 cup diced onion
  • 1 cup diced celery
  • 2 teaspoons chopped garlic
  • 0.25 cup chopped cilantro
  • 2 cups crumbled cornbread
  • 0.5 cup chicken broth
  • 1 tablespoon crumbled cotija cheese
Instructions:
  • Preheat your oven to 350°F (175°C) and grease a baking dish.
  • Remove the casings from the chorizo and cook in a large skillet until crispy and golden brown, for about 7 to 9 minutes. Transfer the cooked chorizo to a large bowl and set aside.
  • In the same skillet, melt butter until bubbly. Sauté onion and celery until tender, for about 5 to 7 minutes. Stir in garlic and cook until aromatic, around 1 minute. Mix in cilantro and combine with chorizo in a bowl. Fold in cornbread and chicken broth until completely blended. Transfer the mixture to the prepared baking dish.
  • Bake in the preheated oven for 20 to 25 minutes until warmed through and stuffing begins to brown. Serve topped with cotija cheese for extra flavor.
