Slow cooker corned beef infused with garlic and rich stout beer, ideal for hearty sandwiches or flavorful corned beef hash.
Ingredients:
  • 1 (4 pound) corned beef brisket, seasoning packet discarded
  • 1 tablespoon whole black peppercorns
  • 4 whole cloves
  • 0.25 teaspoon cayenne pepper
  • 1 pinch ground cinnamon
  • 1 (15 ounce) can dark Irish stout beer (such as Guinness®)
  • 2 medium heads garlic, cloves separated
  • 4 bay leaves
Instructions:
  • Gently nestle brisket, fat-side down, in the slow cooker and cover it with hot water. Cook on High for 1 hour, then carefully remove and discard the water.
  • Place peppercorns, cloves, cayenne, and cinnamon in a tea ball or spice bag. Combine with beer, garlic cloves, bay leaves, and enough water to cover the brisket in the slow cooker.
  • Simmer gently for 5 hours. Delicately remove the tender brisket; it may easily fall apart. Allow the meat to rest before cutting into it.
