Corned beef fried sandwich

Indulge in crispy, cheesy corned beef melts for the perfect comfort food experience.
Ingredients:
  • 450g Beef Corned Silverside
  • 20.00 ml black peppercorns
  • 1 brown onion, cut into quarters
  • 3 flat-leaf parsley sprigs
  • 1 carrot, peeled, chopped
  • 8 x 2cm-thick slices Stone Baked Pane di Casa loaf
  • 40g butter, softened
  • 8 slices Tasty Cheddar
  • 60g pkt Baby Rocket
  • 160g relish
Instructions:
  • In a large heavy-based saucepan over medium heat, combine beef, peppercorns, onion, parsley, and carrot. Cover with water and bring to a boil. Reduce heat to low, cover, and simmer for 2 hours until beef is tender. Let cool in the cooking liquid, then shred the beef using 2 forks.
  • Lay the bread slices on a clean work surface. Evenly spread butter on all slices. Top half of the bread slices with cheddar, corned beef, rocket, relish, and the remaining cheddar. Finish with the remaining bread slices, buttered-side up.
  • 1. Preheat a large frying pan over medium-low heat. 2. Place 2 sandwiches in the pan, buttered-side down. Cook until the bottom is golden brown, about 2-3 minutes. 3. Carefully flip the sandwiches and continue to cook for another 2-3 minutes, or until the cheddar melts and the bread is golden brown. 4. Set aside, cover to keep warm, and repeat with the remaining 2 sandwiches. 5. Serve and enjoy!
