Oven-roasted corned beef with flavorful veggies for a delicious and hassle-free St. Patrick's Day feast.
Ingredients:
  • 1 (5 1/2 pound) corned beef brisket with spice packet
  • 7 small potatoes, peeled and diced
  • 4 medium carrots, peeled and diced
  • 1 medium onion, diced
  • 3 cloves garlic, chopped
Instructions:
  • Preheat the oven to 300°F (150°C) to create the perfect cooking environment for your dish.
  • Place the corned beef brisket in the center of a roasting pan. Surround it with potatoes and carrots, and then sprinkle onion and garlic on top. Sprinkle the seasoning packet over the beef, and add water until the potatoes are nearly submerged. Cover tightly with a lid or heavy aluminum foil.
  • Roast the corned beef in the preheated oven until it's fork-tender, for about 5 to 6 hours.
