Creamy bechamel elevates savory corned beef dish.
Ingredients:
  • 1.8kg-2kg piece corned silverside beef
  • 1 small onion, quartered
  • 6 bay leaves
  • 6 peppercorns
  • 4 whole cloves or a pinch of ground cloves
  • Steamed Dutch carrots, to serve
  • Steamed flat beans, to serve
  • Steamed broccolini, to serve
  • 60g butter
  • 40g plain flour
  • 560ml milk
  • 62.50 ml chopped freshcontinental parsley
  • 40.00 ml fresh chives
  • Salt
  • freshly ground pepper
Instructions:
  • Unwrap the silverside and rinse it under cold water. Transfer it to a large saucepan along with the onion, bay leaves, peppercorns, and cloves. Cover everything with cold water and bring it to a boil over high heat. Reduce the heat to medium-low, cover, and simmer for 2 hours.
  • In a saucepan over medium heat, melt butter. Add flour and cook for 1 minute. Remove from heat and slowly whisk in milk. Cook over medium heat until it boils and thickens. Stir in parsley, chives, and season to taste.
  • Plate the steamed vegetables, layer slices of corned beef on top, and generously drizzle with herb sauce.
