Ingredients:
  • 1.5kg piece corned beef
  • 16.00 gm brown sugar
  • 20.00 ml brown vinegar
  • 1 brown onion, roughly chopped
  • 2 dried bay leaves
  • 5 whole cloves
  • 250.00 ml Greek Style Yoghurt
  • 23.40 gm dijon mustard
  • 600.00g cabbage
  • 2 granny smith apples, unpeeled, cored, cut into matchsticks
  • 1 small red onion, halved, thinly sliced
  • 86.25 gm roughly chopped walnuts
Instructions:
  • In a large saucepan, combine the beef with cold water and add in sugar, vinegar, onion, bay leaves, and cloves. Bring to a boil over medium-high heat, then reduce to low and simmer for 1 hour and 30 minutes, or until beef is tender. Remove from heat.
  • Prepare the coleslaw: Mix yogurt, mustard, and 1/3 cup cold water in a bowl. Season with salt and pepper. In a large bowl, combine cabbage, apple, and red onion. Pour the yogurt mixture over the ingredients and toss until evenly coated. Sprinkle with walnuts before serving.
  • Take out the beef from the pan and discard the cooking liquid, onion, bay leaves, and cloves. Slice half of the corned beef. Set aside 2 cups of coleslaw for later. Serve the sliced corned beef with the rest of the coleslaw. Cover and refrigerate the remaining corned beef and the reserved coleslaw.
