Slow cooker corned beef with apple juice, brown sugar, and mustard, paired with tender veggies.
Ingredients:
  • 4 cups apple juice
  • 0.5 cup brown sugar
  • 1 tablespoon prepared mustard
  • 2 (3 pound) corned beef briskets with spice packets
  • 20 small red potatoes, scrubbed
  • 1 head cabbage, cored and cut into large chunks
  • 2 onions, cut into 8 wedges
  • 4 carrots, cut into chunks
Instructions:
  • 1. In a large slow cooker, pour in apple juice, brown sugar, and mustard, stirring until sugar dissolves. 2. Add the contents of the spice packets to the mixture. 3. Arrange briskets in the apple juice mixture. 4. Top with potatoes, cabbage, onions, and carrots, then gently push vegetables into the liquid.
  • Cook corned beef on High until very tender for 4 to 5 hours, or on Low for 8 to 10 hours. Slice thinly across the grain and serve with vegetables.
