Elevate classic corned beef with a protein-packed salad, featuring sweet apples and hearty lentils for added depth and texture.
Ingredients:
  • 1kg Beef Corned Silverside
  • 1 carrot, coarsely chopped
  • 1 brown onion, coarsely chopped
  • 1 celery stick, coarsely chopped
  • 16.00 gm brown sugar
  • 20.00 ml white vinegar
  • 400g can lentils, drained, rinsed
  • 140g pkt Chopped Kale
  • 1/2 red onion, thinly sliced
  • 1 Granny Smith apple, cored, shredded
  • 36.40 gm olive oil
  • 28.60 gm honey
  • 20.00 ml apple cider vinegar
Instructions:
  • In a large saucepan, combine beef, carrot, onion, celery, sugar, and white vinegar. Cover everything with cold water and bring to a boil over medium-high heat. Reduce the heat to low and simmer covered for 1 1/2 hours until the beef is tender.
  • Place the cooked beef on a plate. Discard the cooking liquid and solids. Cover the beef with foil and let it rest for 15 minutes. Use two forks to shred the beef into pieces.
  • In a large bowl, mix together the beef, lentils, kale, onion, and apple. In a small bowl, whisk together the oil, honey, apple cider vinegar, and garlic. Drizzle the dressing over the salad mixture, season with salt and pepper, then toss to combine. Serve in individual bowls.
