Corned beef with parsley sauce

Feed the whole family with a wallet-friendly, flavorful corned beef dish. Enjoy tasty leftovers for lunch the next day!
Ingredients:
  • 2kg corned beef silverside
  • 1 large brown onion, roughly chopped
  • 1 celery stalk, roughly chopped
  • 1 large carrot, roughly chopped
  • 2 dried bay leaves
  • 1/2 tsp whole black peppercorns
  • Steamed mixed vegetables, to serve
  • Hot English mustard, to serve
  • 75g butter
  • 62.50 ml plain flour
  • 2 tsp Mustard Powder
  • 772.50 gm milk
  • 62.50 ml finely chopped fresh flat-leaf parsley leaves
Instructions:
  • In a large saucepan, generously cover the beef with cold water. Introduce the onion, celery, carrot, bay leaves, and peppercorns to the pan. Cover and bring to a gentle boil over medium-high heat.
  • Lower the heat and let it simmer gently with the pot partially covered for about 2 hours or until the beef is beautifully tender. Remove from the heat.
  • Create a flavorful sauce: In a saucepan over medium heat, melt butter and combine with flour and mustard powder. Stir for 1 minute until bubbling. Remove from heat, slowly whisk in milk, then return to heat. Cook for 3 to 4 minutes until thickened. Take off heat and fold in fresh parsley.
  • Take out the beef from the pot. Discard the liquid, onion, celery, carrot, bay leaves, and peppercorns. Slice the beef and serve with parsley sauce, steamed vegetables, and mustard.
