Balsamic corned beef with parsley relish

Delicious low-calorie meal with lean silverside and veggies, featuring flavorful potatoes.
Ingredients:
  • 600g extra-lean corned silverside, rinsed
  • 1 large brown onion, coarsely chopped
  • 2 celery sticks, chopped
  • 6 black peppercorns
  • 2 bay leaves
  • 16.00 gm brown sugar
  • 40.00 ml balsamic vinegar
  • 500g Carisma potatoes, quartered, steamed
  • 200g green beans, trimmed, steamed
  • 2 zucchini, trimmed, cut into strips, steamed
  • Fresh mint sprigs, to serve
  • 125.00 ml loosely packed parsley leaves, finely chopped
  • 62.50 ml fresh mint leaves, finely chopped
  • 2 tsp capers, rinsed, drained, chopped
  • 25g (about 4) pitted green olives, chopped
  • 27.30 gm extra virgin olive oil classic flavour
  • 20.00 ml white balsamic vinegar
Instructions:
  • - Start by searing the beef in a heavy-based saucepan until browned. - Pour in enough cold water to cover the meat completely. Bring to a gentle boil over low heat. - Drain the water and cover the beef with fresh cold water. - Add onion, celery, pepper, bay leaves, sugar, and vinegar to the pot. - Bring the mixture to a boil, then partially cover and let it simmer on low for 2 hours 30 minutes, or until the meat is tender. Add a splash of water if needed during cooking.
  • Prepare the parsley relish by mixing all ingredients in a bowl, then add a touch of freshly ground pepper for seasoning.
  • Separate meat from cooking liquid and slice. Coat potato in half of the relish. Plate with meat, greens, and finish with mint and the rest of the relish.
