Butterscotch and peanut butter cornflake bites - irresistibly delicious!
Ingredients:
  • 0.5 cup white sugar
  • 0.5 cup brown sugar
  • 1 cup light corn syrup
  • 1 cup peanut butter
  • 6 cups cornflakes cereal
  • 1 cup dry roasted peanuts
  • 1 (11 ounce) package butterscotch chips
Instructions:
  • In a microwave-safe glass or ceramic bowl, heat white sugar, brown sugar, and corn syrup until sugars have dissolved, about 1 minute. Mix in peanut butter. In a large bowl, combine cornflakes and peanuts, then blend in the syrup mixture thoroughly.
  • Coat a 9x13 inch pan with cooking spray. Press the corn flake mixture gently into the pan. Microwave the butterscotch chips in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring after each interval, for 1 to 3 minutes until melted. Be careful not to overheat to avoid scorching. Pour the melted butterscotch over the cornflake mixture. Let it cool, then cut into 1x2 inch bars.
