Indulge in a delicious slice for an enjoyable tea time treat.
Ingredients:
  • 400g can sweetened condensed milk
  • 100g brown sugar
  • 75g unsalted butter
  • 4.40 gm vanilla extract
  • 80.40 gm golden syrup
  • 1000.00 ml cornflakes
  • 85.00 gm desiccated coconut
  • 40.00 gm cocoa powder, sifted
  • 150g icing sugar
  • 250g copha
Instructions:
  • Grease a rectangular tart pan measuring 10 x 33cm and with a depth of 2cm.
  • Combine the condensed milk, brown sugar, butter, vanilla, and golden syrup in a small saucepan.
  • Stir and cook over gentle heat for 5-6 minutes until the mixture thickens and turns a beautiful golden caramel color. Allow it to cool slightly before proceeding.
  • Combine half of the cornflakes, coconut, cocoa, and icing sugar in a large bowl. Melt half of the copha in a pan over low heat, then pour it over the dry ingredients and mix well to combine.
  • Press the mixture firmly into the tart pan and refrigerate for 10 minutes. Next, evenly spread the caramel over the top and chill in the fridge for 30 minutes or until the caramel has hardened.
  • Combine the rest of the cornflakes, coconut, cocoa, and sugar. Melt the rest of the copha as before, then mix everything together. Press the mixture over the caramel layer and chill in the fridge for 1 hour until set.
  • Slice the dish in the pan and elegantly serve.
