Delightful pineapple slice from the Johnstone family on taste.com.au.
Ingredients:
  • 50g butter or margarine, softened
  • 268.75 gm caster sugar
  • 1 egg
  • 250.00 ml lightly crushed cornflakes
  • 85.00 gm desiccated coconut
  • 150.00 gm self-raising flour, sifted
  • 5.00 gm cocoa powder
  • 440g can crushed pineapple (with juice)
  • 85g packet lemon jelly crystals
  • 250.00 ml chilled light & creamy evaporated milk
  • 21.00 gm lemon juice
  • ice-cream, to serve
Instructions:
  • 1. Preheat your oven to 180°C while you prepare a 3cm deep, 24cm x 30cm (base) lamington pan by greasing and lining it. Using an electric mixer, cream together butter and 1/2 cup of sugar until pale and fluffy. Mix in the egg, cornflakes, coconut, flour, cocoa, and a pinch of salt until well combined.
  • Press the mixture firmly into the pan until evenly spread. Bake for 20 minutes, or until it turns a light golden color. Allow it to cool before serving.
  • In a saucepan over medium heat, bring the pineapple and its juice to a boil. Add the jelly crystals and the remaining 3/4 cup of sugar. Stir and cook until everything is dissolved. Transfer the mixture to a bowl and refrigerate until almost set, about 1 hour.
  • Whip milk and lemon juice until thick. Gently fold into jelly mixture. Spread filling over cooled base. Chill for 2 to 3 hours until set. Enjoy with a scoop of ice cream.
