Grilled Pineapple Slices with Ginger Cream

Grilled pineapple with zesty ginger cream is a flavorful and simple dish.
Ingredients:
  • 1/2 cup fat-free sour cream
  • 1 tablespoon packed brown sugar
  • 1 tablespoon chopped crystallized ginger
  • 1 medium pineapple (3 lb)
  • 6 maraschino cherries
Instructions:
  • Preheat gas or charcoal grill. Combine all ginger cream ingredients in a small bowl. Chill in the refrigerator until ready to serve.
  • Trim top and bottom of pineapple by cutting 1/2-inch off each end. Remove rind, slice pineapple into 6 pieces, and carefully take out "eyes" from slices. Drizzle both sides of pineapple slices with butter.
  • Grill pineapple slices over medium heat for 10 to 15 minutes, flipping once, until they are hot and light brown. Serve by topping with ginger cream and garnishing with cherries.
