Cinnamon-spiced apples baked in a pastry shell with a crunchy cornflake topping, drizzled with sweet almond glaze, and served as handheld apple pie bars.
Ingredients:
  • 2.5 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup butter
  • 1 egg yolk
  • 0.66666668653488 cup cold water
  • 1 cup cornflakes cereal
  • 10 apples - peeled, cored and sliced
  • 0.75 cup white sugar
  • 2 teaspoons ground cinnamon
  • 0.5 cup confectioners' sugar
  • 1 tablespoon milk
  • 0.5 teaspoon almond extract
Instructions:
  • Preheat the oven to 375°F (190°C).
  • Combine flour and salt in a large bowl. Cut in the butter until the mixture looks like coarse crumbs. In a cup, beat egg yolk, add cold water, and stir. Gradually mix the egg mixture into the flour mixture until a dough forms. Roll out half of the dough on a clean surface to fit a 9x13 inch pan. Place the dough in the pan.
  • 1. Layer cornflakes over the dough in the pan. 2. Arrange apple slices on top of the cornflake layer. 3. Sprinkle sugar and cinnamon over the apples. 4. Roll out the second half of the dough to cover the entire pan. 5. Place over the filling and pinch the edges of the two crusts together. 6. Beat egg white until foamy, then brush it onto the top crust.
  • Bake in the preheated oven for 45 to 50 minutes until golden brown, then drizzle with glaze while still warm.
  • Prepare the glaze by combining confectioners' sugar, milk, and almond extract in a small bowl, beating until smooth.
