Delicious apple and cheese pastries made with flaky puff pastry.
Ingredients:
  • 1 (24 ounce) carton cottage cheese
  • 3 apples - peeled, cored and thinly sliced
  • 1 teaspoon lemon juice
  • 1 (8 ounce) package cream cheese, at room temperature
  • 0.5 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 (17.5 ounce) package frozen puff pastry, thawed
  • 3 tablespoons white sugar for decoration
Instructions:
  • Strain the cottage cheese in a cheesecloth-lined strainer and gently press with paper towels. Let it rest for 5 to 10 minutes.
  • Transfer the apples to a bowl and gently coat them with a refreshing squeeze of lemon juice to keep them looking bright and fresh.
  • In the bowl of an electric mixer, whip together cream cheese, drained cottage cheese, 1/2 cup sugar, egg, and vanilla extract until nearly smooth, mixing on high speed for 1 to 2 minutes.
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and prepare two baking sheets with parchment paper.
  • Cut each puff pastry sheet into 9 pieces, yielding 18 squares. Roll out each square individually into 5 x 5-inch squares, being gentle along the edges to help the pastries puff up perfectly.
  • Lay out the square dough in a diamond shape. Add a generous portion of cheese filling down the center of each square, leaving space at the top and bottom edges. Arrange 4-5 slices of apple down the center. Fold the left and right corners to meet in the middle and pinch to seal.
  • Place the Danish on a baking sheet, repeat with the remaining pastries. Sprinkle sugar over each bundle and bake in the preheated oven until golden brown, approximately 20 minutes.
