Creamy baked chicken topped with crunchy cornflakes, a perfect quick weeknight meal.
Ingredients:
  • 2 (10.5 ounce) cans cream of chicken soup
  • 3 cups chopped cooked chicken, or more to taste
  • 1 cup finely chopped celery
  • 1 cup cornflakes cereal
  • 1 (8 ounce) can sliced water chestnuts, drained
  • 0.5 cup mayonnaise
  • 0.5 cup finely chopped onion
  • 2 tablespoons butter, melted, or as needed
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • Combine cream of chicken soup, tender cooked chicken, crunchy celery, a cup of crispy cornflakes, water chestnuts, creamy mayonnaise, and flavorful onion in a large bowl, then transfer the mixture into a 9x13-inch casserole dish.
  • Combine 1 cup of cornflakes with melted butter in a bowl, ensuring they are well coated, then sprinkle over the casserole.
  • Bake in the hot oven until the casserole is bubbly and the topping is crisped, around 45 minutes.
