Elevate your rocky road with crunchy cornflakes for a delightful twist. Chill for 30 minutes for a quick and delicious treat!
Ingredients:
  • 180g dark chocolate, chopped
  • 180g milk chocolate, chopped
  • 150g (1 cup) unsalted roasted peanuts
  • 140g (2/3 cup) glace cherries, halved
  • 60g (1 cup) mini marshmallows
  • 35g (1/2 cup) shredded coconut
  • 45g (1 1/4 cups) cornflakes
Instructions:
  • Prepare a 20cm square cake pan by greasing it and lining the base and sides with baking paper, making sure to leave an overhang on two opposite sides.
  • Melt dark and milk chocolates in a heatproof bowl over simmering water, stirring until smooth. Reserve 2 tbsp of melted chocolate in the bowl before transferring the rest to a large bowl. Let it cool slightly.
  • Combine peanuts, cherries, marshmallows, coconut, and 35g (1 cup) of cornflakes using a spatula. Transfer the mixture into the prepared pan, spread it out evenly. Top with the remaining cornflakes and drizzle with the reserved melted chocolate. Chill in the refrigerator for 30 minutes or until set.
  • Cut the rocky road into 16 squares, then transfer to an airtight container and refrigerate for up to 1 week.
