Whip up delicious cornmeal pancakes in 25 minutes with a twist on Bisquick and cornmeal mix - perfect for soaking up maple syrup.
Ingredients:
  • 3/4 cup Original Bisquick™ mix
  • 3/4 cup self-rising white or buttermilk cornmeal mix
  • 1/2 cup yellow cornmeal
  • 1 cup buttermilk
  • 2 eggs
  • 2 tablespoons sugar
  • 2 tablespoons vegetable oil or bacon drippings
  • Additional vegetable oil or bacon drippings
  • Real maple or maple-flavored syrup
Instructions:
  • Combine Bisquick mix, cornmeal mix, and cornmeal in a large bowl, whisk together. Add buttermilk, eggs, sugar, and 2 tablespoons oil; stir until just blended. Allow mixture to rest for 5 minutes.
  • Preheat a griddle or skillet over gentle heat (325°F). Brush with oil and add more as needed. Pour 1/4 cup of batter for each pancake onto the hot surface. Cook until bubbles appear on top, then flip and cook until golden brown on the other side.
  • Drizzle pancakes with sweet, golden syrup.
