Fill a watermelon shell with a mix of seasonal fruits for a beautiful presentation.
Ingredients:
  • 1 medium watermelon
  • 12 cups assorted sliced fresh fruit or berries
  • Fresh mint leaf
Instructions:
  • Trim one end of the watermelon at an angle to create a cornucopia shape. Wrap and store the cut portion in the fridge for later use.
  • Trim a thin slice off the bottom of the watermelon to stabilize it. Hollow out the watermelon, keeping a 1/2- to 1-inch shell intact, and save the chunks. Drain any excess liquid from the shell. Create a decorative pattern along the opening edge of the watermelon shell. Cover and refrigerate the shell for up to 24 hours.
  • Just before serving, stuff the hollowed watermelon shell with bite-size watermelon chunks and other fresh fruit, letting them overflow from the shell. Finish by garnishing with mint leaves.
