Costa Rican Gallo Pinto: Versatile and tasty beans and rice dish for any meal.
Ingredients:
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 0.5 cup chopped celery
  • 4 cloves garlic, chopped
  • 2 cups black beans, rinsed and drained
  • 3 cups cooked white rice
Instructions:
  • In a hot frying pan, sauté onion, bell pepper, celery, and garlic in oil until soft, about 5-7 minutes. Mix in black beans with their juices, salt, and pepper; cook until some liquid evaporates, about 3-5 minutes. Add rice and combine.
  • Simmer covered until veggies are tender and flavors blend, approximately 15 minutes.
