Costa Rican gallo pinto: Flavorful black beans, sauteed onion, and rice crisped to perfection.
Ingredients:
  • 1 bay leaf
  • 1 pound dry black beans
  • 2 cloves garlic, mashed
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon oil, or as needed
  • 2 tablespoons finely chopped onion
  • 1.5 cups cooked rice
Instructions:
  • Inspect beans for any imperfections, then place them in a sizable container and submerge them in cool water, ensuring they are covered by several inches. Allow the beans to soak for a minimum of 1 hour, or preferably overnight.
  • Rinse the beans thoroughly and drain. Place them in a large pan and cover with water, ensuring they are submerged by 2 inches. Add garlic and bay leaf and bring to a boil. Simmer until tender, for about 1 hour. Stir in oregano and salt towards the end of cooking. Remember to set aside a few spoonfuls of the cooking juice.
  • Measure out 1/2 cup of cooked beans for gallo pinto and set aside the rest for later use.
  • Heat oil in a skillet over medium-low heat. Saute onion until caramelized, about 8 to 10 minutes. Add cooked black beans, "caldo," and rice. Cook until rice starts to crisp up, around 3 to 5 minutes.
