Savory beef and olive picadillo over black beans and rice, topped with a fried plantain.
Ingredients:
  • 3 pounds ground beef
  • 0.5 onion, chopped
  • 2 tablespoons garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 cups raisins
  • 2 (8 ounce) jars green olives, drained and chopped
  • 2 (6 ounce) cans tomato paste
  • 0.5 cup water
  • 0.5 bunch cilantro
Instructions:
  • In a Dutch oven or large pot over medium-high heat, cook ground beef until crumbly and no longer pink, about 10 minutes. Drain excess grease, then add onion and garlic, sauté for 2 minutes. Add red pepper, green pepper, raisins, olives, tomato paste, water, and cilantro. Bring to a simmer, then cover and simmer for 10 minutes until peppers are cooked to your liking.
