Tostones (Fried Plantains)

Popular Puerto Rican side dish, perfect with rice and beans.
Ingredients:
  • 2 cups vegetable oil for frying
  • 3 plantains, peeled and sliced into 1-inch pieces
  • salt to taste
  • garlic powder to taste
Instructions:
  • In a heavy skillet over medium heat, heat the oil until shimmering. Add a few plantain slices at a time, cooking until they turn a beautiful light golden color, around three minutes. Place on paper towels to drain, and continue with the rest of the slices.
  • While the plantain slices are still warm, gently press them individually between sheets of wax paper to flatten to 1/4 inch thickness. Return the flattened slices to the skillet and fry until they turn golden brown. Drain on paper towels, and sprinkle with salt and garlic powder to season.
