Crispy double-fried green plantain slices seasoned with salt for a delicious Caribbean appetizer or side dish.
Ingredients:
  • 1 green plantain
  • 5 tablespoons oil for frying
  • 3 cups cold water
Instructions:
  • Peel the plantain and slice into 1-inch pieces. Prepare a bowl filled with 3 cups of cold water.
  • In a large deep skillet over medium-high heat, fry plantain slices in oil until golden brown on both sides, about 3 1/2 minutes per side. Set aside the skillet.
  • Place plantain slices on a chopping board and gently flatten each one by pressing down with a small plate. Soak the flattened plantain slices in cold water.
  • Heat oil in the skillet over medium heat until shimmering; cook plantain slices for 1 minute on each side. Season generously with salt and serve hot.
