Crispy air-fried tostones served with delicious mayo ketchup sauce.
Ingredients:
  • For the dipping sauce:
  • 1 cup mayonnaise
  • 1/4 cup ketchup
  • 1/4 teaspoon garlic powder
  • For the tostones:
  • 3 green plantains
  • 4 cups cold water
  • 1 tablespoon kosher salt
  • 3 tablespoons neutral cooking oil (vegetable, peanut, or coconut oil)
  • coarse salt for sprinkling
Instructions:
  • Make the dipping sauce by combining mayonnaise, ketchup, and garlic powder. Refrigerate covered until serving, up to 48 hours ahead.
  • Peel the green plantains by cutting off the ends, scoring down the back, and using your thumbs to slide off the peel.
  • Preheat your air fryer until it reaches 350°F.
  • In a large bowl, mix 4 cups of cold water with 1 tablespoon of kosher salt. Cut the plantain into 1 1/2-inch-thick chunks and let them soak in the water for 20 minutes to prevent browning and maintain moisture when air-fried.
  • Pat dry the plantains and par-fry them in 1 tablespoon of oil until they are tender, about 3 to 6 minutes per side in the air fryer basket, making sure they are evenly spaced for proper crisping.
  • Flatten the plantains: Raise the air fryer temperature to 400°F. Take the plantain slices out of the basket and flatten them using a tostonera or a coffee mug between parchment paper or a brown paper bag until they are 1/4-inch thick discs.
  • Place the smashed plantains back into the air fryer basket. Brush the top side of the tostones with a light layer of oil and air fry for 3 minutes. Flip the tostones, brush with oil once more, and air fry for an additional 4 minutes until crispy. You may need to do this in batches depending on your air fryer size.
