Lighter Puerto Rican tostones made in an air fryer with olive oil spray, a healthier twist on a classic recipe.
Ingredients:
  • 2 green (unripe) plantains
  • olive oil cooking spray
  • 3 cups water, or as needed
  • salt to taste
Instructions:
  • Preheat the air fryer to 400°F (200°C).
  • Trim ends off the plantain. Slice a vertical line down the skin from end to end, ensuring you only cut the thick skin, not the flesh inside. Cut plantain, peel intact, into 1-inch pieces. Peel skin from each piece, starting at the slit you created.
  • Add your plantain chunks to the air fryer basket and generously coat them with olive oil spray. Air fry for 5 minutes until crisp. While they're cooking, make a bowl of salted water.
  • Using tongs, take out the plantain pieces from the air fryer. Flatten them to about 1/2-inch thickness with a tostonera (plantain smasher), and soak the flattened tostones in the bowl of salted water while finishing the rest.
  • After soaking, gently lift the tostones out of the salted water and carefully dry them with a paper towel.
  • Place the tostones back in the air fryer in single layers. Spray tops with olive oil and sprinkle with salt. Air fry for 5 minutes, then flip with tongs, spray the other side, and sprinkle with salt. Continue air frying until golden and crispy, for about 4 to 5 minutes.
