Tender chicken drumsticks and potatoes simmered in a flavorful bell pepper, onion, and cilantro puree for a classic Puerto Rican stew. Enjoy with white rice, crispy tostones, and a refreshing salad.
Ingredients:
  • 1 pound chicken drumsticks
  • 1 tablespoon adobo seasoning
  • 0.5 (.18 ounce) packet sazon seasoning
  • 5 large red potatoes, peeled and thickly sliced
  • 1 large red bell pepper, seeded and chopped
  • 1 large green bell pepper, seeded and chopped
  • 1 large onion, chopped
  • 5 cloves garlic, minced
  • 1 bunch fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 0.5 cup dry red wine
  • 1 teaspoon ground cumin
  • 2 fresh or dried bay leaves
Instructions:
  • Rinse and dry the chicken before placing it in a spacious bowl. Season generously with adobo seasoning, sazon seasoning, and salt. Transfer the seasoned chicken legs to a slow cooker and layer with potato slices.
  • Blend together the red pepper, green pepper, onion, garlic, cilantro, olive oil, wine, cumin, and oregano until smooth. Pour the mixture over the chicken and add the bay leaves.
  • Slow cook for 6 to 8 hours until the chicken is tender and easily falls off the bone.
