Crispy smashed plantains with a delicious mayo-ketchup garlic dip.
Ingredients:
  • 0.5 cup mayonnaise
  • 0.5 cup ketchup
  • 1 large clove garlic, pressed
  • 3 cups canola oil for frying
  • 2 green plantains, peeled and cut into 1 1/2-inch chunks
  • 1 pinch garlic salt
Instructions:
  • Mix together creamy mayonnaise, tangy ketchup, and flavorful garlic in a small bowl. Chill the sauce for a minimum of 30 minutes before serving.
  • Preheat oil in a deep fryer or large saucepan to 350 degrees F (175 degrees C). Fry plantains until golden for 5 to 7 minutes. Drain on a paper towel-lined plate and cool slightly.
  • Press down on each plantain using a tostonero or the bottom of a clean can. Fry the flattened plantains in hot oil until golden and crisp, for an additional 5 to 7 minutes. Sprinkle with garlic salt and serve with sauce.
