Tostones Rellenos (Stuffed Plantain Cups)

Double-fried plantain cups filled with seasoned beef and cheese.
Ingredients:
  • 3 cups canola oil for frying
  • 2 green plantains, peeled and sliced crosswise into fourths
  • 2 teaspoons garlic salt
  • 1 pound lean ground beef
  • 0.75 teaspoon salt
  • 0.5 cup sofrito
  • 0.5 cup tomato sauce
  • 0.25 cup water
  • 1 (1.41 ounce) package sazon seasoning
  • 5 pitted green olives, chopped
  • 1 cup shredded Cheddar cheese
Instructions:
  • Preheat oil in a deep fryer or large saucepan to 350°F (175°C).
  • In hot oil, fry plantains until golden but not brown, for 5 to 7 minutes. Smash each plantain piece using a tostonera or the bottom of a small dish to create small disks, then shape them into small cups. Continue frying cups in hot oil until golden and crisp, for an additional 5 to 7 minutes. Drain on paper towel-lined plate, season with garlic salt, and set aside.
  • Preheat your oven to 350°F (175°C).
  • Prepare the filling by heating a large skillet over medium-high heat. Add ground beef, season with salt, and cook until crumbly and browned, about 10 minutes. Drain any excess grease. Stir in sofrito, tomato sauce, water, sazón seasoning, and olives. Simmer over medium-low heat until liquid is reduced, about 15 minutes.
  • Stuff plantain cups generously with flavorful beef mixture, sprinkle with rich Cheddar cheese, and place elegantly on a baking sheet.
  • Bake until the cheese is bubbly and melted, about 5-8 minutes in the preheated oven.
