Satisfying breakfast bowl with high protein and low carbs, customizable with veggies or ham. Keeps you full until lunch.
Ingredients:
  • 2 slices bacon, chopped
  • 2 medium fresh mushrooms, chopped
  • 1 tablespoon minced green onions (including green tops)
  • salt and ground black pepper to taste
  • 0.5 cup cottage cheese
Instructions:
  • Fry bacon in a small nonstick skillet over medium heat until crispy, for about 4 to 5 minutes. Remove bacon to a bowl lined with paper towels, keeping the flavorful bacon grease in a separate bowl.
  • Heat a skillet over medium-high heat, then add 1 teaspoon of the reserved bacon grease. Sauté mushrooms and green onions until lightly browned, which should take about 3 to 4 minutes. Season with salt and pepper, then transfer to a small bowl to keep warm.
  • Heat the skillet once again over medium-high heat and incorporate 1 teaspoon of the leftover bacon grease. Scramble the eggs until they are fully cooked, which should take about 2 to 3 minutes. Add a sprinkle of salt and pepper for seasoning. Take the skillet off the heat and keep the eggs warm.
  • In a microwave-safe bowl, warm cottage cheese on 50% power for 60 to 90 seconds, stirring halfway through. Drain any liquid, then move cottage cheese to one side of a single-serving bowl. Add scrambled eggs to the other side, and finish by topping with mushroom mixture and bacon. Serve hot.
