Irresistible cheesy mashed potatoes top a flavorful minced meat dish, packed with hidden veggies - a family favorite!
Ingredients:
  • 2 carrots
  • 2 sticks celery
  • 1 brown onion
  • 1 zucchini
  • 1 garlic clove (crushed)
  • 9.20 gm olive oil
  • 400g extra lean beef mince
  • 20.00 ml flour
  • 318.75 gm beef stock
  • 85.80 gm tomato sauce
  • 1kg peeled and chopped potatoes
  • 84.98 gm warm milk
  • 250.00 ml low fat cheese
Instructions:
  • Heat 2 teaspoons of olive oil in a pan and sauté finely chopped 2 carrots, 2 sticks of celery, 1 brown onion, and 1 zucchini with 1 crushed garlic clove for 7 minutes. Once vegetables are tender, add 400g of extra lean beef mince and cook on high heat until browned. Stir in 1 tablespoon of flour and cook for an additional minute. Pour in 1 1/4 cups of beef stock and 1/3 cup of tomato sauce, then season to taste.
  • Boil 1kg of peeled and chopped potatoes until tender, then drain and mash them. Next, beat in 1/3 cup of warm skim milk and season generously.
  • Transfer the mixture into an ovenproof dish. Smooth the mashed potato over the top and sprinkle with 1 cup of low-fat cheese. Bake in a 200°C oven for 15 minutes.
