Country Egg Scramble

Whip up a quick and hearty breakfast with potatoes, bacon, and green onions for a delicious morning treat!
Ingredients:
  • 1 pound (6 to 7) new red potatoes, cubed
  • 6 eggs
  • 1/3 cup milk
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons butter or margarine
  • 4 medium green onions, sliced (1/4 cup)
  • 6 slices bacon, crisply cooked and crumbled
Instructions:
  • Bring 1 inch of water in a 2-quart saucepan to a boil. Add potatoes, cover, and bring back to a boil. Reduce heat to medium-low, cover, and cook for 6 to 8 minutes until potatoes are tender. Drain potatoes.
  • Whisk eggs, milk, salt, and pepper until smooth and golden; set aside.
  • Heat butter in a 10-inch skillet over medium-high heat until melted. Add potatoes and cook for 3 to 5 minutes until lightly browned, turning occasionally. Stir in onions and cook for 1 minute, stirring constantly.
  • Gently pour the egg mixture into a skillet and let it set at the bottom and sides. Use a spatula to lift the cooked portions, allowing the uncooked parts to flow to the bottom. Avoid over-stirring. Cook for 3 to 4 minutes until the eggs are thickened but still moist. Sprinkle with bacon before serving.
