Fluffy couscous salad with sweet cranberries, crisp cucumber, and fresh herbs - a perfect side or lunch option.
Ingredients:
  • 187.50 ml Greek-style yoghurt
  • 1 garlic clove, crushed
  • 375.00 ml couscous
  • 82.50 ml dried cranberries
  • 1 continental cucumber, halved, sliced
  • 125.00 ml chopped flat-leaf parsley
  • 62.50 ml chopped mint, plus extra sprig to serve
  • 56.88 gm extra virgin olive oil
Instructions:
  • In a small bowl, mix together the yogurt, garlic, and lemon juice. Season to taste.
  • In a heatproof bowl, combine couscous with 1 1/2 cups of boiling water. Cover and let it sit for 3 minutes. Fluff it with a fork, cover again, and let it sit for an additional 3 minutes. Fluff it once more. Allow it to cool for 10 minutes.
  • Combine the cranberries, cucumber, herbs, and oil with the couscous. Season generously and mix until everything is well coated.
  • Garnish with a fresh mint sprig and generously drizzle the yogurt mixture over the top.
