Vibrant couscous salad with bell peppers, cucumber, onion, and tomato, featuring a secret hummus-infused dressing for a creamy touch. Perfect for picnics, barbecues, and pairing with grilled proteins. Versatile, healthy, and delicious. Ideal for lunches, weeknight dinners, and outdoor gatherings.
Ingredients:
  • 200g couscous
  • 200ml chicken style liquid stock
  • 1 Lebanese cucumber, seeds removed, diced
  • 1/2 red onion, finely sliced
  • 1 yellow capsicum, seeds removed, diced
  • 2 vine-ripened tomatoes, seeds removed, diced
  • 20.00 ml hummus (optional)
Instructions:
  • In a large bowl, combine couscous. Heat stock and 1 tablespoon olive oil in a saucepan until just boiling, then pour over couscous. Cover and let sit for 10 minutes.
  • Fluff the couscous with a fork and season to taste with salt and pepper. Once the couscous has cooled, mix in the cucumber, onion, bell pepper, tomato, and parsley.
  • Combine the leftover olive oil, lemon juice, and hummus in a small bowl. Pour this mixture into the couscous and stir until everything is well mixed.
