Indulge in a Mediterranean-inspired couscous salad with refreshing flavors. A light and nutritious dish for any occasion.
Ingredients:
  • 190g (1 cup) couscous
  • 2 Vegetable Stock Cubes, crumbled
  • 330ml (1 1/3 cups) boiling water
  • 36.40 gm olive oil
  • 3 garlic cloves, thinly sliced
  • 80g (½ cup) pitted green olives, halved
  • 70g (⅓ cup) drained semi-dried tomatoes, sliced
  • 200g Danish feta, crumbled
  • 80g (½ cup) pine nuts, toasted
  • Zest and juice of 1 lemon
  • 20.00 ml roughly chopped fresh oregano
  • 40.00 ml roughly chopped fresh continental parsley
Instructions:
  • In a large heatproof bowl, combine couscous and stock cubes. Pour boiling water over the mixture and stir until the stock cubes dissolve. Allow to stand for 5 minutes.
  • In a small frying pan over medium heat, sizzle garlic in oil for about 1 minute until it turns a light golden hue. Take it off the heat.
  • Fluff couscous gently with a fork. Mix in garlic mixture, olives, tomato, feta, pine nuts, lemon zest, lemon juice, and herbs. Toss everything together until well combined. Serve and enjoy!
