Whip up a delicious Instant Pot Mediterranean couscous salad in minutes - fresh and flavorful!
Ingredients:
  • 2 tablespoons olive oil
  • 2 cups couscous
  • 0.5 cup dried mung beans
  • 4 cups vegetable broth
  • 2 teaspoons salt, divided
  • 1 cucumber, diced
  • 2 tomatoes, diced
  • 1 lemon, juiced
  • 1 tablespoon chopped cilantro
  • 0.5 teaspoon ground black pepper
Instructions:
  • Heat olive oil in a multi-functional pressure cooker on Saute mode. Add couscous and mung beans, cook and stir for 2 minutes. Pour in vegetable broth and sprinkle with 1 teaspoon of salt. Secure the lid and set to high pressure for 20 minutes following the cooker's guidelines. Allow pressure to build for 10 to 15 minutes.
  • Follow manufacturer's instructions for natural pressure release for 10 minutes, then quick-release any remaining pressure for approximately 5 minutes. Remove the lid, fluff couscous with a fork, and allow to cool for about 10 minutes.
  • In a bowl, mix together couscous, mung beans, cucumber, tomatoes, lemon juice, and cilantro. Season with 1 teaspoon of salt and pepper to taste.
