Ingredients:
  • 400g couscous
  • 1 tsp chicken style stock powder
  • 100g mayonnaise
  • 2.50 gm smoked paprika (pimenton) (see note)
  • 2-3 smoked chicken breasts (500g total), shredded
  • 125.00 ml sliced marinated artichoke hearts
  • 82.50 ml sliced roasted red capsicum (see note)
  • 82.50 ml sliced semi-dried tomatoes
  • 40.00 ml chopped basil leaves, plus whole leaves to garnish
  • Butter lettuce leaves, to serve
  • Lemon wedges, (optional) to serve
Instructions:
  • Combine couscous, stock powder, and oil in a large bowl. Add 2 cups (500ml) boiling water, cover with a tea towel, and let sit for 10 minutes.
  • In a large bowl, mix together mayonnaise and paprika. Add 2 tablespoons of warm water to loosen the mixture, then combine with chicken, artichoke, capsicum, and tomatoes. Season to taste.
  • Gently stir the couscous with a fork, season with salt and pepper, then mix in the fresh chopped basil. Spoon the couscous and chicken onto lettuce leaves, garnish with basil leaves, and serve with optional lemon wedges on the side.
