Revamp your lunch routine with a quick, delicious, and nutritious salad that's low in calories and bursting with flavor. Ready in just 15 minutes!
Ingredients:
  • 75g green beans, halved
  • 45g (1/4 cup) wholemeal couscous
  • 60ml (1/4 cup) boiling water
  • 95g can tuna in chilli oil, drained, flaked
  • 50g cherry tomatoes, halved
  • 30g baby spinach and rocket mix
  • 40.00 ml chopped fresh continental parsley leaves
  • 15.90 gm fresh lemon juice
  • 5.90 gm Dijon mustard
Instructions:
  • Steam the beans over boiling water in a steamer basket for 2-3 minutes until tender crisp. Drain thoroughly.
  • Pour boiling water over the couscous in a large heatproof bowl. Allow it to sit covered for 3 minutes until the liquid is absorbed. Fluff the grains with a fork and season to taste.
  • Combine the beans, tuna, tomato, spinach, rocket, and parsley with the couscous. In a jug, mix lemon juice and mustard, then drizzle over the couscous mixture. Toss everything together to combine.
