Deliciously quick and easy cheesy tuna pasta bake, a crowd-pleaser ready in just 10 minutes! Perfect for busy weeknights.
Ingredients:
  • 250g spelt fusilli (spiral) pasta
  • 9.20 gm olive oil
  • 4 anchovies, drained, finely chopped
  • 1 brown onion, finely chopped
  • 200g button mushrooms, sliced
  • 2 x 400g cans chopped tomatoes
  • 1 lemon, rind finely grated
  • 125.00 ml fresh continental parsley leaves, finely chopped
  • 200g Cottage Cheese
  • 425g can Tuna In Spring water, drained, flaked
  • 2 large tomatoes, thinly sliced
  • 20g (1/4 cup) finely grated parmesan
  • 150g mixed salad leaves
Instructions:
  • Preheat your oven to 180C/160C fan forced. Cook the pasta in a large saucepan of salted boiling water according to the package instructions. Drain the pasta and lightly grease a large baking dish with oil.
  • Heat oil in a frying pan over medium heat, then sauté anchovy and onion until softened. Add mushroom and garlic, cook until golden. Stir in canned tomatoes and 125ml (1/2 cup) water, simmer until thickened, about 15 minutes.
  • Fold in lemon rind, parsley (keeping 1 tbs aside), and half of the cottage cheese. Season the mixture. Combine with pasta and tuna. Mix gently. Transfer to a baking dish. Layer with tomato slices, parmesan, and the remaining cottage cheese. Season lightly. Bake for 25-30 minutes until golden brown. Garnish with the reserved parsley before serving with a side salad.
