Quick and delicious 20-minute meal: Couscous salad with orange and avocado.
Ingredients:
  • 1 cup orange juice
  • 3/4 cup uncooked couscous
  • 1 medium carrot, shredded (3/4 cup)
  • 2 medium green onions, sliced (1/4 cup)
  • 2 avocados, peeled and sliced
  • 2 medium oranges, peeled and sectioned
  • 1/4 cup French dressing
  • 2 tablespoons salted sunflower nuts
Instructions:
  • Boil orange juice in a saucepan, then take it off the heat. Mix in couscous, cover, and let it sit for 5 minutes. Finally, stir in the carrot and onions.
  • Distribute couscous evenly on 4 plates and artistically place avocado slices and orange sections around the couscous.
  • Drizzle salads with dressing and sprinkle with nuts to add a delightful crunch and burst of flavor.
