Savory Dungeness crab omelet with mushrooms and Swiss cheese - a gourmet breakfast delight.
Ingredients:
  • 2 tablespoons butter
  • 0.5 cup sliced fresh mushrooms
  • 2 tablespoons milk
  • 1 cup cooked crabmeat
  • 1 cup shredded Swiss cheese
Instructions:
  • In a large nonstick skillet, melt butter over medium-high heat. Add mushrooms and cook until tender, about 5 minutes. Transfer mushrooms to a plate using a slotted spoon. Remove skillet from heat.
  • Blend egg yolks and milk in a small bowl. In a separate bowl, beat egg whites with a dry beater until soft peaks form. Gently fold yolks into whites.
  • Heat skillet over medium-high heat until the butter sizzles. Pour in the egg mixture. Sprinkle mushrooms and crab meat evenly on top. Cook until the omelet starts to set, approximately 3 minutes. Add Swiss cheese. Fold the omelet in half using a spatula. Cover and cook until the omelet puffs up and is fully cooked, about 3 minutes. Transfer the omelet onto a large plate.
